They say that in England some 85% of conversations start with a reference to “the Weather”.  

To grow good grapes, the weather is one of the intrinsic factors in our search for “optimum ripening”. Anyone who has been to Darling at midday and in mid-summer will tell you that it is not a cool place. So how do we manage to get elegant, flavoursome and distinctive wines?  The chilly westerly wind coming in from the Atlantic is the perfect air-conditioner to cool everything down at the end of the day and have the vines waking up refreshed in the morning ….just like people, vines love the summer sun, but need to sleep cool, to wake up refreshed …

Generally regarded as the most innovative wine person in South Africa, Charles Back saw the gold in those Darling hills some 15 years ago and invested in a sizeable piece of vineyard. This has now doubled in size and incorporates the well known Lanner Hill.
